final product goofy looking. i topped it with sour cream, then again it could be topped with anything you want.. shredded chicken, cheese… you get the idea.
First slice up your potatoes. This is were this can be easy or hard. Make sure you have a big sharp knife. The thickness of the slices will determine how long will they take to cook.
I slide on thin and one a little bit thicker. Being that all my good knives were in the dishwasher i used one that is for bread and broken so it made it harder. My recommendation don’t get lazy and do them thick. It will take less time to slice them right than the time it will take for them to cook properly if they are thick.
Slice the potato almost all the way thru, leave just enough “meat” for them to stay connected…
I put all of my seasoning in the butter and distributed them between the slices. Because some of my herbs were bigger that typical the really helped to space out the slices so they could cook all the way around. This also helps so that the potato cooks evenly, any slices that aren’t separated might not cook as well.
Stick them in the oven at 375 degrees for about 40 to 50 minutes.
I saw picture of this really cool looking potato on pinterest and decided to give it a try. Like almost everything on pinterest there are no instructions, or recipes.
Thankfully this is a very simple thing to do.
Ingredients that i used are basically all replaceable… even the potato… for any other root.
List:
potato (squash, yam, sweet potato, cassava, zucchini… yo get were i’m going with this)
melted butter
Seasoning (this herbs are all freeze dried, i always prefer fresh herbs, but these were at the store and decided to try them. They are no substitute for fresh herbs, but they are 10x better than the normal ones, somehow they do have a lot more flavor than conventionally dried herbs, but a fair warning… they are expensive. at about $4 to $5 each.
Black truffle oil I got this at marshalls… its the nearest store near me that has it, keep in mind when buying truffle oil… or anything with truffles to read the back. This brand in particular is olive oil or sunflower oil with truffle extract. They do sell olive oil that has been flavored with actual bits of truffle. Those are usually more expensive

The Homeless Dog Café
Went to culebra last Friday and found the most amazing place to eat… only it’s not really a place.
After and hour of looking for their restaurant I called them up and found out… they have no actual place. The deliver the food to you! no matter where you are at as long as you are in culebra.
After drooling over everything the nice lady said on the phone I decide that their royal sushi roll was the perfect bite to eat before heading back home on the 7pm ferry. So I had them delivered to the port.
The ROYALE roll is exactly what it names suggest, royal. It has lobster, crab, salmon, fish caught of the day, avocado, i think cream cheese, scallions, and caviar.
Sadly we got to the port early only to find out the ferry was loading up early so we would be leaving earlier than expected.
After holding back literally the entire ferry waiting for us to get our sushi we finally got to sit down and enjoy it. All thanks to the amazing people from the homeless dog cafe who hurried up because our constant nagging, and the amazing people from port authority who gave us a brake and held back the ferry.
My only regret was not ordering more food :(
The sushi was amazing and by the looks of it i would say everything else in their menu.
If you are going to culebra you must order from them… the perfect meal to watch the sunset at any beach.
They serve super fresh food, so guaranteed to be tasty.

It has been a long time since i updated my blog, and for that i am sorry. I was in the process of filling all the papers for my masters application hopefully I’ll get in. :D
I promise there are good thing to come starting with my latest trip to culebra!
I recommend you put some wax paper down as a surface
First take the wet mixture and spread it on top and the sides, it can get tricky but pat it down.
Secondly sprinkle the dry “flour” and pat it down also.
Thirdly turn over and repeat the first and second step.
Then drop CAREFULLY into hot oil to deep fry, for about a minute on each side. and then onto a cooling rack.
After doing this to each individual portion bake the fish for about 20 minutes on 300 degrees.
Remember the prep work.
Before actually preparing the batter, preheat your ovens and oil so it will be ready when you need them.
Step 1 Fresh fish of your choice
Step 2 Grind a cup of pork rinds with 1/2 cup of cilantro (use cilantro to your liking)
step 3 Add 1 egg to the mix
Step 4 clean out the food processor or blender and grind another cup of pork rinds (keep separate from the wet mixture.
My dad is back on the atkins diet so i was trying to make him things that didn’t remind him he couldn’t eat carbs. So what did i come up with? breaded fried fish. only one problem right? flour… so how could i substitute flour?
I have no idea how i came up with this but i did and it what totally worth it. I used a food processor to make pork rind “flour” and “breaded” the fish with it!
The result… amazeballs
Hummus and Pita bread
I used a store bought hummus :( i already had it in the fridge so it really made no sense to make some from scratch.
I used regular store bought pita bread and spread it with a paste i made using
3 garlic cloves
Parmesan cheese
Olive oil
Paprika
Set to broil in the oven and cut up in slices
For the plating i took a ziplock bag and cut a corner and put in an icing decoration tip and filled it with hummus to pipe it in the little bowls
Lastly pus a slice of pita bread on a corner
…. could’ve done something prettier with the pita slices but the taste is really good.
